Love is in the oven…

Last week fresh hosted a bake sale fundraiser to support our charity, The Seashell Trust.  fresh usually nominate Fridays to ‘Fat Fridays’ where unhealthier snacks of crisps and chocolate are provided to the team as opposed to the healthy fruit provided every other day of the working week. However, last Friday we had cakes as well but we didn’t feel guilty because it was all for a good cause and to celebrate Valentines Day!

Generous volunteers from across the fresh team gave up their time last Thursday evening to bake some Valentines-themed goodies to sell and their creativity shone through in what was produced. Cakes included:

  • Chocolate Guinness cake
  • Chocolate brownies
  • Raspberry cookies
  • Caramel flapjacks
  • Perfectly chocolate cupcakes
  • Rice crispy cakes

… and many more!

A donation of 50p was made for the smaller sized cakes and £1 for the larger slices. Even if those cakes were a bit of a naughty indulgence, at least they were rewarding!

Here’s a mouth-watering glimpse at some of the yummy treats:

We all voted for our favourite which was the Chocolate cupcakes. As a Valentines treat from us to you, we have provided the secret recipe below (you can thank us later!):

Perfectly Chocolate Cupcakes

(Makes 24-27 standard sized cupcakes)

  • 2 cups of sugar
  • 1 ¾ cups all purpose flour
  • ¾ cup unsweetened cocoa
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Marshmallow (or any sweet of your choice)

Directions:

  • Line muffin tin with paper liners. Heat oven to 350*F.
  • In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.
  • Add eggs, milk, oil and vanilla/ Beat on medium speed for one minute.
  • Stir in boiling water (the batter will be thin, don’t worry. This is right).
  • Fill liners 2/3 full with batter.
  • Bake cupcakes for approximately 18-22 minutes.
  • Cool completely on wire rack before adding frosting.
  • Place marshmallow (or any sweet of your choice) on top for decoration.
